Potato Pancakes with Savory Beef and Cheese


Ingredients:


4 medium-sized potatoes, peeled and grated


2 large eggs


2 tablespoons all-purpose flour


1/2 lb ground beef


1 small onion, finely chopped


1 cup shredded cheese (mozzarella or cheddar)


Salt and black pepper, to taste


2 tablespoons oil or butter for frying



Instructions:


1. Place grated potatoes in a clean towel and squeeze out excess liquid.



2. In a bowl, mix potatoes with eggs, flour, salt, and pepper until combined.



3. In a skillet, cook ground beef with onion until browned. Season with salt and pepper, then set aside.



4. Heat oil in a nonstick skillet over medium heat.



5. Place a spoonful of potato mixture in the skillet, flatten slightly. Add a spoonful of beef and some cheese on top, then cover with more potato mixture.



6. Cook for 3–4 minutes per side until golden brown and crispy.



7. Repeat with remaining mixture.



8. Serve hot, garnished with fresh herbs if desired.
