Moist Chocolate Cake with Ganache
Ingredients:
For the Cake:
1 3/4 cups all-purpose flour
1 1/2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup hot water
For the Ganache:
1 cup heavy cream
8 oz semi-sweet chocolate, chopped
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
2. In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
3. Add eggs, milk, oil, and vanilla; mix until smooth.
4. Stir in hot water gradually (batter will be thin).
5. Pour batter into prepared pan and bake 30–35 minutes, or until a toothpick comes out clean. Let cool.
6. For ganache, heat heavy cream until just simmering, then pour over chopped chocolate. Let sit 5 minutes, then stir until smooth.
7. Spread ganache over cooled cake.
8. Slice and serve.
