Shrimp-Stuffed Salmon
Ingredients:
4 salmon fillets (skinless)
1/2 lb shrimp (peeled, deveined, chopped)
1/2 cup cream cheese, softened
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
1 tablespoon olive oil
Salt and black pepper, to taste
Instructions:
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a bowl, mix chopped shrimp, cream cheese, Parmesan, garlic, parsley, lemon juice, salt, and pepper until well combined.
3. Slice each salmon fillet horizontally to create a pocket.
4. Stuff the shrimp mixture into each pocket and press lightly to seal.
5. Brush salmon with olive oil and season the outside with salt and pepper.
6. Place stuffed salmon on the baking sheet and bake for 18–20 minutes, until salmon is cooked through.
7. Optional: broil for 2–3 minutes for a golden top.
8. Serve hot with lemon wedges.
