Strawberry Tres Leches Cake


Ingredients:


For the Cake:


1 cup all-purpose flour


1 1/2 teaspoons baking powder


1/4 teaspoon salt


5 large eggs, separated


1 cup granulated sugar, divided


1/3 cup whole milk


1 teaspoon vanilla extract



For the Milk Mixture:


1 can (12 oz) evaporated milk


1 can (14 oz) sweetened condensed milk


1/2 cup heavy cream



For the Topping:


2 cups heavy cream


1/4 cup powdered sugar


1 teaspoon vanilla extract


Fresh strawberries and raspberries, sliced



Instructions:


1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.



2. In a bowl, whisk flour, baking powder, and salt.



3. Separate eggs. Beat egg yolks with 3/4 cup sugar until pale. Stir in milk and vanilla. Fold into flour mixture.



4. In another bowl, beat egg whites until soft peaks form. Add remaining 1/4 cup sugar and beat until stiff. Fold gently into batter.



5. Pour into dish and bake 25–30 minutes until golden. Cool completely.



6. In a bowl, whisk evaporated milk, condensed milk, and cream. Poke holes in cake and pour milk mixture over. Chill 4 hours or overnight.



7. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread over cake.



8. Top with strawberries and raspberries. Serve chilled.
