Spicy Cajun Shrimp, Sausage, and Cabbage Stir-Fry over Rice
Ingredients:
1 lb large shrimp, peeled and deveined
12 oz smoked sausage, sliced
1/2 head green cabbage, chopped
1 medium onion, sliced
1 red bell pepper, sliced (optional)
3 cloves garlic, minced
2 tbsp olive oil (or butter)
2–3 tbsp Cajun seasoning (adjust to taste)
1/2 tsp smoked paprika
1/4 tsp cayenne pepper (optional, for extra heat)
Salt and black pepper, to taste
1/4 cup chicken broth or water
2 cups cooked white rice (for serving)
Fresh parsley or green onions, chopped (for garnish)
Instructions:
1. Prepare Rice: Cook rice separately and keep warm.
2. Cook Sausage: In a large skillet or wok, heat 1 tbsp oil over medium-high heat. Add sausage slices and cook until browned, about 4–5 minutes. Remove and set aside.
3. Sauté Vegetables: Add remaining oil, onion, bell pepper, and garlic. Cook until softened, about 3 minutes. Add chopped cabbage and stir-fry for 5–6 minutes until slightly tender.
4. Season: Sprinkle in Cajun seasoning, smoked paprika, cayenne, salt, and pepper. Stir well to coat the vegetables. Add chicken broth to help steam and soften the cabbage.
5. Cook Shrimp: Push vegetables to the side, add shrimp to the skillet, and cook 2–3 minutes per side until pink and opaque.
6. Combine: Return sausage to the skillet, toss everything together, and adjust seasoning to taste.
7. Serve: Spoon stir-fry over warm rice and garnish with parsley or green onions.
