Smothered Green Beans, Potatoes & Sausage

 



Ingredients:


1 lb smoked sausage, sliced


1 onion, diced


2 lbs fresh green beans, trimmed (or frozen)


6 medium potatoes, peeled and quartered


3 cups chicken broth (or vegetable broth)


2 tbsp olive oil or butter


1 tsp garlic powder


1 tsp paprika


1 tsp black pepper


Salt to taste


Instructions:


1. In a large pot, heat olive oil or butter. Add sausage slices and onion, sauté until sausage is lightly browned and onion is soft.


2. Stir in green beans and potatoes. Season with garlic powder, paprika, salt, and pepper.


3. Pour in chicken (or vegetable) broth. Bring to a boil.


4. Reduce heat, cover, and simmer for 30–40 minutes, until potatoes are tender and beans are well cooked.


5. Stir gently and serve warm.
