Louisiana Seafood Pasta Salad
Ingredients:
1 lb cooked shrimp, peeled and deveined
1 lb fusilli pasta (or any preferred pasta)
1 cup diced cucumber
1 cup diced celery
1 cup diced bell pepper (optional)
1/4 cup finely chopped red onion
1/2 cup mayonnaise
1/4 cup sour cream
2 tbsp Dijon mustard
2 tbsp lemon juice
1 tsp hot sauce (optional, for a spicy kick)
1 tsp Old Bay seasoning
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
1. Prepare the Pasta and Shrimp:
Cook the fusilli pasta according to the package directions. Drain, rinse with cold water, and set aside to cool.
If the shrimp is not already cooked, boil or sauté them until they turn pink. Once done, set them aside to cool.
2. Prepare the Vegetables:
Dice the cucumber, celery, bell pepper (if using), and red onion into small, even pieces.
3. Make the Dressing:
In a large mixing bowl, combine mayonnaise, sour cream, Dijon mustard, lemon juice, hot sauce (if using), Old Bay seasoning, salt, and pepper. Mix well until smooth.
4. Combine Ingredients:
Add the cooled pasta, shrimp, diced vegetables, and dressing into the bowl. Toss gently to combine, ensuring everything is evenly coated.
5. Chill and Serve:
Cover and refrigerate the pasta salad for at least 1-2 hours before serving to allow the flavors to meld together.
Garnish with fresh parsley just before serving.
