Brown Sugar Cinnamon Swirl Pancakes 🍁

Ingredients

For the Pancakes:

1 cup (120g) all-purpose flour

2 tbsp (25g) granulated sugar

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

¾ cup (180ml) buttermilk

1 large egg

1 tbsp (14g) unsalted butter, melted

1 tsp vanilla extract

For the Swirl:

¼ cup (57g) unsalted butter, melted

¼ cup (50g) packed dark brown sugar

1 tsp ground cinnamon

To Serve:

Maple syrup

Whipped cream (optional)

Instructions

1. Make the Swirl: Mix melted butter, brown sugar, and cinnamon until thick. Transfer to a zip-top bag, snip the corner, and set aside.

2. Mix Dry Ingredients: Whisk flour, sugar, baking powder, baking soda, and salt in a bowl.

3. Mix Wet Ingredients: In another bowl, whisk buttermilk, egg, melted butter, and vanilla until smooth.

4. Combine Batter: Stir wet mixture into dry just until combined (a few lumps are fine).

5. Heat the Skillet: Warm a greased non-stick skillet over medium heat.

6. Cook the Pancakes: Pour ¼ cup batter per pancake, then immediately pipe a cinnamon swirl on top. Cook until bubbles form and edges set (2–3 minutes), flip, then cook another 1–2 minutes.

7. Serve: Stack warm pancakes, drizzle with maple syrup, and top with whipped cream if desired.
