Lazy Girl Pecan Pie Bars
Ingredients:
1 package (16 oz) refrigerated pie crusts (2 crusts)
1 cup light corn syrup
1 cup packed brown sugar
4 large eggs
¼ cup unsalted butter, melted
1½ tsp vanilla extract
½ tsp salt
2 cups chopped pecans

Instructions:
1. Preheat oven to 350°F (175°C).
Grease or line a 9x13-inch baking pan with parchment paper for easy removal.
2. Prepare the crust:
Unroll both pie crusts and press them into the bottom of the prepared baking dish, overlapping slightly to fit and pressing to seal any seams. Prick all over with a fork to prevent bubbling.
3. Blind bake crust:
Bake crust for 10 minutes, then remove from oven.
4. Make the filling:
In a large bowl, whisk together corn syrup, brown sugar, eggs, melted butter, vanilla, and salt until smooth and well combined.
5. Add pecans:
Stir in chopped pecans, then pour the mixture evenly over the pre-baked crust.
6. Bake:
Return to oven and bake for 30–35 minutes, or until the center is set and golden brown on top.
7. Cool & slice:
Let the bars cool completely in the pan. Once cooled, cut into squares or bars.
