Fresh Fruit Tart
Ingredients:
For the Crust:
1 1/2 cups all-purpose flour
1/2 cup unsalted butter, cold and cubed
1/4 cup granulated sugar
1/4 teaspoon salt
1 large egg yolk
2–3 tablespoons cold water
For the Filling:
8 oz cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup whipped cream (or whipped topping)
For the Topping:
2 kiwis, sliced
1/2 cup blueberries
1/2 cup raspberries
1/2 cup strawberries or mango chunks
1/4 cup apricot jam (for glaze)
1 tablespoon water
Instructions:
1. Preheat oven to 350°F (175°C). In a bowl, mix flour, sugar, and salt. Cut in butter until crumbly. Add egg yolk and cold water; mix into dough. Press into tart pan. Bake 15–18 minutes until golden. Cool completely.
2. In a bowl, beat cream cheese, sugar, and vanilla until smooth. Fold in whipped cream. Spread filling evenly into cooled crust.
3. Arrange sliced fruit decoratively on top.
4. For glaze, heat apricot jam with water until melted. Brush over fruit.
5. Chill for at least 1 hour before serving.
