Chocolate Wafer Icebox Cak

 



Ingredients:


2 cups heavy whipping cream, cold


½ cup powdered sugar


1 tsp vanilla extract


1 package chocolate wafer cookies (or thin chocolate biscuits)


4 oz dark chocolate, shaved or finely chopped (for layers and topping)


Optional: chocolate ganache or cocoa powder for garnish



Instructions:


1. In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.



2. On a serving plate, spread a thin layer of whipped cream to anchor the cake.



3. Arrange a single layer of chocolate wafers over the cream.



4. Spread a generous layer of whipped cream over the wafers, then sprinkle with shaved chocolate.



5. Repeat layering (wafers → whipped cream → chocolate) until all ingredients are used, finishing with whipped cream on top.



6. Garnish with extra chocolate shavings, ganache drizzle, or piped cream swirls.



7. Refrigerate for at least 4–6 hours (preferably overnight) to allow cookies to soften into cake-like layers.



8. Slice chilled and serve.
