Chocolate Fudge Cake

 



Ingredients:


1 ¾ cups all-purpose flour


1 ½ tsp baking powder


½ tsp baking soda


½ tsp salt


¾ cup unsweetened cocoa powder


1 ¾ cups granulated sugar


½ cup vegetable oil


2 large eggs


2 tsp vanilla extract


1 cup buttermilk


1 cup hot coffee or hot water



For the Chocolate Frosting:


1 cup unsalted butter, softened


3 ½ cups powdered sugar


½ cup unsweetened cocoa powder


½ tsp salt


2 tsp vanilla extract


½ cup heavy cream (more if needed)



Instructions:


1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.



2. In a bowl, whisk flour, baking powder, baking soda, salt, and cocoa powder.



3. In another large bowl, beat sugar, oil, eggs, and vanilla until well combined.



4. Add dry ingredients alternately with buttermilk, mixing gently.



5. Stir in hot coffee (batter will be thin).



6. Divide batter between pans and bake 30–35 minutes, until a toothpick comes out clean. Cool completely.



7. For frosting, beat butter until creamy. Add powdered sugar, cocoa, and salt, then mix in vanilla and cream until fluffy.



8. Spread frosting between cake layers, then cover top and sides with remaining frosting.



9. Slice and enjoy!
