Taco Macaroni and Cheese

 




Ingredients:


1 lb ground beef


1 packet taco seasoning


1 can Rotel (diced tomatoes with green chilies)


2 boxes macaroni & cheese (with cheese packets)


4 tbsp butter (for mac & cheese)


½ cup milk (for mac & cheese)


1 cup shredded cheddar cheese (optional, for topping)


Fresh cilantro and diced tomatoes (for garnish)



Instructions:


1. Cook macaroni & cheese according to package directions, using the butter and milk. Set aside.



2. In a skillet, brown the ground beef over medium heat. Drain excess grease.



3. Stir in taco seasoning and Rotel. Simmer for 5 minutes.



4. Add the prepared macaroni & cheese into the skillet and mix well.



5. Sprinkle with extra cheddar cheese on top, cover until melted.



6. Garnish with cilantro and diced tomatoes before serving.
