Matilda Chocolate Cake


Ingredients:


1 ¾ cups all-purpose flour


1 ½ cups granulated sugar


¾ cup unsweetened cocoa powder


2 tsp baking soda


1 tsp baking powder


1 tsp salt


2 large eggs


1 cup buttermilk (or milk + 1 tbsp vinegar)


½ cup vegetable oil


2 tsp vanilla extract


1 cup hot coffee or hot water


For the Chocolate Glaze:


1 cup semisweet chocolate chips


½ cup heavy cream


2 tbsp butter


Instructions:


1. Preheat oven to 175°C (350°F). Grease and flour a 9x13-inch pan.


2. In a large bowl, whisk together flour, sugar, cocoa, baking soda, baking powder, and salt.


3. Add eggs, buttermilk, oil, and vanilla. Mix until smooth.


4. Stir in hot coffee (batter will be thin). Pour into prepared pan.


5. Bake for 35–40 minutes, or until a toothpick comes out clean. Cool slightly.


6. For the glaze: Heat cream and butter, then pour over chocolate chips. Stir until smooth.


7. Pour the glaze over the cooled cake. Let set before slicing.
