Southern-Style String Beans with Smoked Turkey Necks and Potatoes

 


Ingredients:
1 lb fresh or frozen green beans, trimmed
1 lb smoked turkey necks
4 small white potatoes, peeled and halved
1 small onion, chopped
3 cloves garlic, minced
4 cups chicken or vegetable broth
1 tsp salt (adjust to taste)
½ tsp black pepper
½ tsp red pepper flakes (optional)
1 tsp smoked paprika
1 tbsp butter or olive oil


Instructions:
1. Sauté the Aromatics
In a large pot, heat butter or olive oil over medium heat.
Add chopped onion and garlic, sautéing until fragrant and softened.
2. Cook the Turkey Necks
Place smoked turkey necks into the pot and pour in broth.
Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour until the turkey is tender.
3. Add the Vegetables & Seasoning
Stir in green beans, potatoes, salt, black pepper, red pepper flakes, and smoked paprika.
Cover and simmer for 30-40 minutes, allowing the flavors to meld.
4. Shred the Turkey & Serve
Remove the turkey necks, shred the meat, and discard the bones.
Return the shredded meat to the pot and stir everything together.
Adjust seasoning if needed and serve warm.
